Macaroni and Cheese

I love this version of Macaroni and Cheese. It has more protein than a lot of standard recipes.

Macaroni and Cheese

1 lb elbow macaroni (or similar)
4 c. cottage cheese (I use non-fat)
2 c. sour cream (I use light)
2 eggs beaten
1 1/2 t. salt
1/2 t. pepper
20 oz sharp cheddar cheese -grated (I have used other cheeses - some bleu cheese is yummy)

Cook macaroni according to package directions.
While the macaroni is cooking, combine the rest of the ingredients in a large bowl (save some grated cheese for the top).
Drain the cooked macaroni and add to other ingredients. Add milk as needed to make the mixture "sloshy". It should be wet and loose.
Place macaroni mixture into greased 9x13 (or so) pan.
Top with remaining cheese.
Bake uncovered 45 minutes in a 350F oven.
Let sit 10 minutes before serving.
