ingredients
6 c. cubed butternut squash
1/2 c. diced onion
2 T olive oil
1 T fresh thyme (minced)
1 c. crumbled blue cheese
1/2 c. panko bread crumbs
directions
preheat oven to 425F (convection if you have it)
mix all ingredients in a large bowl
spread onto a baking sheet (stoneware if you have it)
bake 35 to 45 minutes - squash should be cooked through and the top brown
